Pancake Day Cupcakes

What better to have on Pancake Day than Delicious sticky cupcakes topped with a teeny pancake stack. Drizzle over with golden syrup, maple syrup or chocolate sauce. Top with chocolate chips or some fresh fruit.
Pancake day cupcakes

Ingredients

Cupcakes –
200g Self Raising Flour
180g Caster Sugar
180g Butter
3 Medium Eggs
2 Tbsp Golden Syrup

Pancakes –
130g Self Raising Flour
1 Tsp Caster Sugar
1 Medium Egg
130ml Milk
1 Tsp Vanilla

Equipment

12 Hole muffin tin
Frying Pan
1E piping nozzle
What better to have on Pancake Day than Delicious sticky cupcakes topped with a teeny pancake stack. Drizzle over with golden syrup, maple syrup or chocolate sauce. Top with chocolate chips or some fresh fruit.

Method

Cupcakes –

Soften the butter in the microwave. Now add all your ingredients in a mixer and mix together until well combined. Use a 56mm ice cream scoop to scoop batter into each cupcake case. Cook at 160 fan for 20 minutes. Turn the tray around and cook for a further 2-3 minutes until lightly golden brown.

Pancakes

Put all your pancake ingredients in a bowl and mix thoroughly with a fork until smooth.

Head a frying pan with a small amount of oil. Using a measuring spoon, spoon 1 tbsp of pancake batter carefully in the pan ensuring it stays as round as possible. Cook for a minute on each side turning when lightly golden brown. You should be able to add a few pancakes in your pan at once depending on the pan size.

Decorating

Once everything is cool, Pipe a buttercream swirl on your cupcake then top with a pancake stack. Drizzle some golden syrup over the top. Yummy x
