
Mix together the butter and sugar. You’ll see this go much lighter in colour and appear fluffy. Once at this stage you can stop the mixer, scrape down the bowl and add all the other ingredients in. Mix until combined.
Line a 2 lob loaf tin with baking paper and fill the tin 3/4 full with batter
Cook on 160 fan oven for 40 minutes then turn the tray around and cook for a further 5 minutes or until cooked. A skewer needs to come out clean.
Syrup – Mix the icing sugar and juices together. As soon as the loaf comes out the oven, poke lots of holes into the loaf tin with a skewer then pour the syrup over the top and allow to drain into the holes.
Allow to cool then top with lemon and lime slices.
