I love these so much. They always take me back to my childhood making them with my mum every Christmas. Really easy to make so get the kids involved too! I’ll definitely be making some more for Christmas day. Try some flavour variations. How about a citrus version with lemon extract? Or replace 30g of icing sugar with cocoa powder, add in 2 tsp of orange extract for chocolate orange creams.
Sift the Icing sugar to rid of any lumps.
In another bowl, whisk the egg whites with a mixer or electric hand whisk until the egg white is light and fluffy.
Mix in the peppermint extract into the egg white and mix again for 10 seconds.
Now add this into the icing sugar. Add some food colouring and mix until well combined. This mixture should be like a firm cookie dough.
You can add a little more icing sugar if needed. You’ll definitely need some when you roll this out. Don’t be shy with the icing sugar, it really helps to add a lot to the surface and roll out the peppermint creams on this.
Roll out to 5-10mm and cut out approx a 1 – 1.5 inch circle. Pop these circles on baking paper and leave somewhere to dry out. This usually takes around 1 hour. Then turn the peppermint creams over and leave for 30 minutes. These should now be dry and firm to decorate.
I chose a fun grinch inspired design for these yummy sweets. Melt 80g of dark chocolate. Gently hold the peppermint creams and dip half into the melted chocolate. Lay on baking paper. Add on some green sprinkles and a sprinkle heart.
