Double Funfetti Cookies

Soft and Delicious Double Funfetti Cookies, stuffed with buttercream and white chocolate ganache, and topped with white chocolate drizzle and more sprinkles… Could these get any better? Definitely not!
Funfetti cookie recipe

Ingredients

200 g Unsalted Butter/Stork
140 g Light Brown Sugar
60 g White Granulated Sugar
2 Medium Eggs
3 tsp Vanilla
410 g Plain Flour
3/4 tsp Bicarbonate of Soda
100g Confetti bakeable sprinkles

Buttercream
250g Unsalted butter
500g icing sugar
2 tsp vanilla extract
Food colouring – Colour mill.

Ganache
60ml double cream – I use Elmlea
110g White chocolate – I use Callebaut

Equipment

Piping Bag
8B nozzle
Soft and Delicious Double Funfetti Cookies, stuffed with buttercream and white chocolate ganache, and topped with white chocolate drizzle and more sprinkles… Could these get any better? Definitely not! These are absolutely beastly so feel free to halve the size of the cookies for a smaller portion. Especially as 2 cookies are stacked together. But I went all out and created them huge because why not! Enjoy

Method


Soften your butter in the microwave. Don’t soften butter too much, just enough to mix through. Cream together the butter and sugars for 30-40 seconds. Add in eggs and vanilla and mix until combined.


Add flour, salt, sprinkles and bicarb. Mix to form a firm dough.


Take an ice cream scoop of batter and scoop out onto a baking paper lined tray. Put in a preheated oven for 12-14 minutes or until just starting to go light golden colour.


Buttercream – Whip the soft butter on high until light and fluffy. Then add in the icing sugar and extract and mix well. Add in the boiling water until it is at the desired consistency.

White chocolate ganache – Microwave double cream and white chocolate together on 30 second bursts until melted. Don’t over heat.


Allow to cool and thicken. Pipe a buttercream rim on one cookie. Pipe ganache in the middle, pop another cookie on top. Drizzle with melted white chocolate and add sprinkles.
